Gramma’s Rice Pudding
Ellen Mark's Gramma’s Rice Pudding
"This was my grandmother’s recipe and always my favorite comfort food. I followed her around the kitchen while she prepared it in her late 80s. She made it for me every time I came home during college."
Melt 1 stick (1/4 lb) butter or margarine in 9x12 baking pan in 350 oven
In mixing bowl, add:
3-4 medium apples sliced thin (I do a mix of sweet and tart). Add a little lemon juice if apples are sweet.
2 cups partially cooked rice (not soggy! - works best with white rice)
1 tsp salt
3 or 4 eggs, beaten
2 T. brown sugar
1/2 pound raisins (or less)
I can whole-berry cranberry sauce (doesn’t work with fresh)
Sprinkle with cinnamon before baking (optional).
Mix together. Add some melted butter, and leave rest to coat pan. Bake 1 hour. I serve this with main course.
