Sue Fox Horn's Rainbow Latkes

 

My kids (now 44 and 41) went to Hebrew School at Beth Am before we came to Mishkon (almost 30 years ago). This latke recipe was in the weekly newsletter sent to parents. Everyone loves it, and for people who don't like green vegetables, you don't have to tell them what's in it.

Rainbow Latkes Recipe

Ingredients
1 grated zucchini, well-drained
1 grated sweet potato
2 grated white potatoes, drained
1 grated onion, drained
2 beaten eggs
3 Tbsp. flour
1 tsp. salt
Oil for frying

Directions 
To drain vegetables, you can put them in a colander and/or squeeze them with a tea towel.
Mix all the ingredients. 
Drop by spoonfuls into a frying pan with hot oil, and brown on both sides. 
Drain on paper towels or brown paper bags.
